Peppermint Bark Lollipop Buttons

Okay my lovely and wonderfully patient readers. I have another chocolate and peppermint post. Yes, another one. As if the peppermint bark and the chocolate candy canes weren’t enough…..I bring you – peppermint bark lollipops. If this blog were your only source of nutrition, you would probably have scurvy by now. My bad, I promise I’ll start posting real, nourishing food again next week. You see, my dessert making skills are somewhat limited, BUT I am really good at melting chocolate (yay microwave). Being messy with melty chocolate is pretty fun – so naturally, I bought a 10 pound bag of chocolate chips from our local wholesale mart in some sort of weird Christmas shopping hysteria. Naturally.

In my defense, everything looks smaller in there. Next to a 200 roll pack of paper towels, 10 pounds of chocolate looks rather puny. When I lugged that bag up to my loft, it didn’t look so puny anymore – it looked ginormous. Cue, me dipping everything in the pantry in chocolate, and sharing it with you.

These little peppermint, chocolate buttons took mere minutes to make, and required a very minimal amount of chocolate. At only 1 tablespoon each, you can make quite a few of these with only 1/2 cup melted chocolate. Made with dark chocolate, peppermint extract, and a few bits of candy cane, these taste just like peppermint bark. Eat them on their own, or use one to turn your coffee into a peppermint mocha. They’re delicious either way.

Special Equipment:

  • Lollipop sticks
  • Button candy mold

Ingredients:

  • 1/2 cup dark chocolate chips
  • 1/8 teaspoon peppermint extract
  • Candy cane sprinkles

Directions:

  • Melt chocolate over a double boiler, or in thirty second intervals in the microwave
  • Stir in peppermint extract
  • Spoon melted chocolate into candy molds, filling to the top
  • Insert lollipop sticks
  • Allow chocolate to set in the refrigerator for 30 minutes.
  • Store in a cool dry place in an air tight container
